The grapes are all picked by hand and transported in crates of 18 kg.  They spend some time in a cold room before being transferred into vat.   We always carry out a double sorting of the grapes (bunches and berries), on a conveyor belt and vibrating table.  In this way, we ensure that the raw material going into the vat is in perfect condition.

Our small stainless steel and concrete tanks allow us to vinify our single vineyards separately, preserving as much as possible of the individual traits of each “terroir” that makes up the Coruña del Conde landscape.

All the fermentations are allowed to start spontaneously with the grapes’ own yeasts, and we carry out continuous bâtonnages to give extra body to the wine.  The wine rests in French oak barrels for a minimum of 12 months and will be rounded out in foudres (large oak vats) before going into bottle.
